Easy Thanksgiving Recipes Under an Hour Dishes

So, what we’ve done is come up with three delicious 40-min or less recipes to lighten your cooking load this holiday season! 🙂

Yam with Ricotta, Walnuts, and Cranberries on Salad

Thanksgiving Yam Salad

Serves 2 | Time: 30 minutes


2/3 yam
1/2 pack of radicchio salad
1 pear
1/2 lemon
1/4 cup(80 g) Ricotta
1/4 cup (30 g) walnuts
1/4 cup (30 g) dried cranberries
2 tsp honey
1 tsp ground cinnamon
1/2 tsp nutmeg
4 tbsp olive oil
2 tsp apple vinegar


  1. Preheat oven to 400°F.
  2. Thoroughly wash and slice yam.
  3. In a bowl, mix yams with half of oil, season with salt and cinnamon.
  4. Place yams on baking sheet layered with parchment paper and bake for about 15 min.
  5. In the meantime, chop walnuts and toast in a pan without oil for 2-3 min.
  6. Season ricotta with salt and nutmeg.
  7. Wash, let dry, and cut radicchio.
  8. Wash, de-seed and slice pear. Drizzle with lemon juice.
  9. For the dressing, mix apple vinegar and remaining oil.
  10. Top yam slices with ricotta and bake for another 3 min.
  11. Remove yam slices from the oven, sprinkle with walnuts and cranberries, drizzle with honey.
  12. Arrange salad on plates, drizzle with dressing, place pear and yam slices on top to serve.

Shepherd’s Pie with Yam

Thanksgiving Shepherds Pie

Serves 2 | Time: 30-40 minutes


1 yam
1 carrot
2 tsp (10 g) ginger
1 yellow onion
2 tbsp (6 g) fresh parsley
1/2 lb (200 g) ground beef
1 cup (200 g) peeled tomatoes
1/4 cup chicken broth
1/4 cup (60 g) prunes
4 tbsp olive oil
1/4 tsp ground cinnamon
1/4 tsp chili powder
1/4 tsp nutmeg
1/4 cup milk
1 clove garlic


  1. Wash, peel, and dice yam.
  2. Boil yam in salted water for about 15 min.
  3. Drain the cooked yam, add milk, season with nutmeg, and mash.
  4. Preheat oven to 400°F.
  5. In the meantime, peel and finely dice onion.
  6. Peel and finely dice garlic and ginger.
  7. Wash, peel, and finely dice carrot.
  8. Finely cut prunes.
  9. Heat half of oil in a pan and fry meat for 4-5 min. Remove from the pan and set aside.
  10. Heat the remaining oil in the pan and sauté onion for 2-3 min.
  11. Add garlic and ginger, and cook for another minute.
  12. Add carrot and cook for 3-4 min.
  13. Add cooked meat to the pan, season with salt, pepper, cumin, cinnamon, and chili powder.
  14. Add tomatoes, broth, and prunes. Mash tomatoes with spatula and let simmer for about 5 min.
  15. Place meat sauce in small dishes, top with yam mash and bake for about 15 min.
  16. Wash, shake dry, and chop parsley.
  17. Sprinkle pie with parsley and serve warm.

Sandwich with Camembert, Turkey & Cranberry Sauce

Thanksgiving Leftover Sandwich

Serves 2 | Time: 20 minutes


2/3 cup (20 g) mixed greens
1/4 orange
2 cups (200 g) fresh or frozen cranberries
1/2 lb (200 g) turkey breast
5.6 oz (160 g) Camembert
5.6 oz (160 g) bread
2 tbsp sugar
2 tbsp olive oil
all spice


  1. Wash orange and grate zest.
  2. Wash cranberries, if using fresh ones.
  3. Place cranberries in a pot, add water 1/8 cup water (per serving), add orange zest and sugar, let simmer for about 15 min.
  4. Preheat oven to 360°F.
  5. Season turkey breast with salt, pepper, and allspice.
  6. Heat oil in a pan and fry turkey breast for 2-3 min. per side.
  7. Wrap the meat in aluminium foil and bake for 5-6 min.
  8. Wash salad and let dry.
  9. Slice Camembert.
  10. Slice turkey breast.
  11. Toast bread in a pan or in a toaster.
  12. Top bread slices with cranberry sauce, Camembert, turkey breast, salad, and serve.
