Fruity Quinoa Peach & Cherry Salad

Serves 2 | Time: 30 minutes

INGREDIENTS

2 peach
1/2 lb (200 g) cherries
1 orange
1/2 cup (10 g) fresh mint
2/3 cup (120 g) quinoa
1/4 cup (30 g) unsalted pistachios
1/4 cup goat cheese roll
2 tbsp olive oil
1 tsp apple vinegar
salt

METHOD

  2. Boil quinoa according to packet instructions.

  3. Wash orange and squeeze out juice.

  4. Wash mint, shake dry and chop up.

  5. To make the dressing: Mix orange juice, olive oil, apple vinegar, agave syrup and salt.

  6. Mix quinoa with half of the dressing and mint; leave for approx. 5 min.

  7. In the meantime, wash peach; cut in half, remove stone and cut into slices.

  8. Wash cherries, cut in half and stone.

  9. Coarsely chop pistachios.

  10. Arrange salad on plates; add dressing, sprinkle with pistachios and goat cheese; serve.
