INGREDIENTS
2 peach
1/2 lb (200 g) cherries
1 orange
1/2 cup (10 g) fresh mint
2/3 cup (120 g) quinoa
1/4 cup (30 g) unsalted pistachios
1/4 cup goat cheese roll
2 tbsp olive oil
1 tsp apple vinegar
salt
METHOD

Boil quinoa according to packet instructions. -
Wash orange and squeeze out juice. -
Wash mint, shake dry and chop up. -
To make the dressing: Mix orange juice, olive oil, apple vinegar, agave syrup and salt. -
Mix quinoa with half of the dressing and mint; leave for approx. 5 min. -
In the meantime, wash peach; cut in half, remove stone and cut into slices. -
Wash cherries, cut in half and stone. -
Coarsely chop pistachios. -
Arrange salad on plates; add dressing, sprinkle with pistachios and goat cheese; serve. Recipe by Kptn Tanya
