Spicy Chicken with Bulgur

Serves 2 | Time: 30 minutes

INGREDIENTS

1 shallot
2 clove garlic
2 1/2 cup arugula
1/2 cup fresh basil
2 cup diced tomatoes
2 chicken breast (boneless, skinless) approx. 1/4 lb
2 tbsp tomato paste
2 tbsp orange juice
3 tbsp olive oil
2/3 cup bulgur
1 tbsp  butter
1 tsp chili flakes
salt
pepper
sugar

METHOD

  2. Peel and chop garlic and shallots.

  3. Rinse, dry, and season chicken breast with salt.

  4. Heat olive oil in a pan and fry chicken for about 6-8 min. Remove from pan.

  5. Add oil to the pan and lightly braise garlic, shallots, and chili.
    REZ_424_05

  6. Add tomato paste and sauté.

  7. Deglaze with orange juice and canned tomatoes, season with salt, pepper, and sugar, and let simmer for about 15 min.

  8. Meanwhile, cook bulgar according to package instructions.

  9. Chop basil.

  10. Add chicken to the pan and cook in tomato sauce for about 5 min.

  11. Mix bulgur with butter and basil and season with salt and pepper.

  12. Then serve with tomato sauce, chicken, and arugula.
