Camembert Blast Burger with Onion Chutney

Serves 2 | Time: 30 minutes

INGREDIENTS

2 cups mixed greens
1/4 cucumber
1 red onion
2 buns
5,6 oz Camembert cheese
1 organic egg
2 tbsps raspberry jam
2 tbsps bredcrumbs
2 tbsps butter
4 tbsps olive oil
2 tbsps wheat flour
1 tsp sugar
salt
pepper

METHOD

  2. Peel red onion and cut into rings.

  3. Heat butter in a small pot.

  4. Add onions, bring to a boil, and add sugar. Let simmer for about 10-15 min.

  5. Prepare 3 plates: one with flour, one with bread crumbs, and one with the whisked egg (with salt and pepper).

  6. Coat Camembert cheese with flour on both sides…

  7. …then coat with egg….

  8. …and finally coat with bread crumbs.

  9. Heat olive oil in a pan and fry cheese for about 4-5 min. Turn occasionally.

  10. After 10-15 min. add raspberry jam to the chutney and season to taste with salt and pepper.

  11. Wash and drain greens.

  12. Wash and slice cucumber.

  13. Top bun with onion chutney, salad, cheese, and cucumber.
